This recipe originated from the Farmer's Journal . It's easy and always a hit.
Baked 9" pie crust shell.
3/4 cup sugar
3 tablespoons cornstarch
1/4 cup water
1/8 teaspoon salt
4 or 5 cups blue berries
1 tablespoon butter
Combine sugar,cornstarch and salt in saucepan. Add water and 2 cups berries. Stir mixture constantly over medium heat until it boils and becomes quite thick .Remove from heat and add butter and stir until melted. Place remaining berries in the pie shell. Pour cooked mixture over the top and gently mix. Cool for 3 hours or so. A dollop of sour cream mixed with sugar can be added at serving time.
